Gourmet Sauvage's craftsmen know how to capture the minty and resinous notes of the fir to create a fine handcrafted syrup, perfumed and balance, as equally grand as our forests. This syrup can be sed in both sweet and salty recipes, but is really the mixologist's best friend. It will add complexity, both fresh and wood at the same time. Made from hand picked fresh wild fir needles, cane sugar and a bit of acidity.

Balsam Fir Mojito
- 30 ml Balsam Fir syrup
- 30 ml lime juice
- 50 ml dark rum
- 200 ml sparkling water
- Lime quarters
Mix syrup and lime juice in a shaker. Pour in an ice-filled glass, add rum, sparkling water, stir and serve. Garnish with lime.

The sweet clover is a common plant, anonymous in the forest. It smells like the end of a hot summer day in the countryside, of honey plant and warm hay.

This birch syrup is made from long boiled birch sap, as would be done for maple syrup. The result makes for an exceptional high-quality product with molasse, anise and coffee notes, with a residual acidity to balsamic vinegar. Close to 160 liters of sap are required for 1 liter of syrup, whereas it is closer to 40 to 1 for maple syrup. The result of this huge reduction makes for a rich, complex and concentrated syrup.
