Honey Rye Lemonade
1.5 oz Dillon’s The White Rye (or other rye)
3 dashes Dillon’s Lemon Bitters
0.5 oz honey simple syrup (1:1 water and honey mix)
Freshly squeezed lemonade
Fresh lemon
Ice
Over ice combine the rye, bitters, and honey simple syrup in a rocks glass. Top with lemonade. Garnish with a slice of lemon.
Gin & Tonic
1.5oz Dillon’s Unfiltered Gin 22 (or other gin)
A few dashes of Dillon’s Bitter Lemon
Tonic Water
Fresh Lemon or Lime wedge
Fill short glass with ice. Combine gin, bitter & Tonic Water. Garnish with a wedge of lemon or lime, your choice.
Made using fennel grown in our garden, along with select botanicals.

Blood orange French 75
1 oz Dillon’s Unfiltered Gin 22 (or other gin)
3 oz Blood Orange Puree
3 dashes Dillon’s Ginger Bitters
¼ oz Simple syrup
Sparkling Wine
Combine Dillon’s Unfiltered Gin 22, Blood Orange Puree, and simple syrup. Top with sparkling wine and enjoy.
Lavender Bee's knees
2 oz Dillon’s Unfiltered Gin 22 (or other gin)
3 dashes Dillon’s Ginger Bitters
2 dashes Dillon’s Ginseng Bitters
1 oz fresh lemon juice
3/4 oz lavender honey syrup (instructions below)
Sprig of lavender, for garnish
In a cocktail shaker, combine the Dillon’s Unfiltered Gin 22, lemon juice, bitters and simple syrup. Shake over ice and strain into your glass of choice. Garnish with sprig of lavender.
Lavender and honey simple syrup
1/4 cup honey
1/8 cup water
1 tsp dried lavender
Combine the honey, water, and lavender in a saucepan over low heat. When it reaches a boil, remove from heat and let sit for 30 minutes. Strain into a jar and store in the refrigerator until use. This makes enough for only one cocktail so increase the volumes if creating for a whole group!

The PDX - 2 oz Bull Run American Whiskey - 1 oz Ransom Sweet Vermouth - 6-8 dashes The Bitter Housewife Barrel Aged Bitters - Maraschino Cherry plus a bar spoon of the juice
Stir whiskey, vermouth, bitters, and cherry juice with ice. Strain into a cocktail glass or coup, garnish with the cherry.

- 1.50 oz Téquila Blanco
- 0.50 oz Amaro
- 0.50 oz Apple liqueur
- 0.50 oz Lime juice
- 0.50 oz Honey Syrup 1:1
- 2 dash of Autumn Bog Cranberry

½ oz of Coffee Cardamom Syrup Les Charlatans
½ lime juice
Pour over ice in a lowball glass type. Garnish with a slice of lime.
Pimped Rhum&Coke
2 oz of spiced rum (Chic chock)
1/2 oz of coffee & cardamom syrup Les Charlatans
1/4 oz of lime juice
4 dashes of a nut bitters (like Fee Brothers' black walnut bitters)
Method: Mix with crushed ice and add top with coke in a old fashioned or lowball glass.

RECIPE
Maple old fashioned
2 oz Kinsip Crimson Rye whisky (or other)
1/2 oz maple syrup
A few drops of Kinsip house aromatic bitters
Twist of orange peel for garnish
Mix whisky, maple syrup and bitters in an old-fashioned glass until syrup is dissolved. Add a single large ice cube and serve with a twist of orange peel.
This orange syrup is sour and slightly bitter, and will be the ideal companion for your Old Fashioned, margarita as well as beers and lemonades.
Beer : enhances blond, white and IPA beers
Wine : delicious in red and white margaritas or to pimp a white wine
No alcohol : great in lemonades or to give a twist to a sparkling water, iced tea, or kombucha
