Balsam Fir Mojito

• 30 ml Balsam Fir syrup
• 30 ml lime juice
• 50 ml dark rum
• 200 ml sparkling water
• Lime quarters

Mix syrup and lime juice in a shaker. Pour in an ice-filled glass, add rum, sparkling water, stir and serve. Garnish with lime.

The result makes for an exceptional high-quality product with molasse, anise and coffee notes, with a residual acidity to balsamic vinegar. Close to 160 liters of sap are required for 1 liter of syrup, whereas it is closer to 40 to 1 for maple syrup. The result of this huge reduction makes for a rich, complex and concentrated syrup.
