Description

A rich bitters created from only local rhubarb and natural botanicals. It starts with fresh-pressed rhubarb juice from our own gardens, combined with a touch of star anise and ginger plus several other herbs to make a unique bitters that is tart but not overpoweringly so.

Dillon’s takes pride in handcrafting products using copper pot stills and fresh local ingredients without artificial flavours or colours. Dillon’s strives to make new spirits from old ideas and to do so with unparalleled quality, one small batch at a time.

RECIPES (from Dillon’s)

The Reef
2 oz Dillon’s 95 Vodka
1½ oz Simple syrup
2 dashes Dillon’s Rhubarb Bitters
6-10 Fresh strawberries
4 Mint leaves
Sparkling water
Place a handful of ice in a Collins glass. Over ice add Dillon’s 95 Vodka and simple syrup. Muddle strawberries and mint. Layer strawberry and mint muddle over mixture in glass. Garnish with a layer of fresh mint leaves and a whole strawberry.

1½ oz Dillon’s Vodka Method 95
¼ oz Lime Juice
½ oz Grenadine
1 oz Strawberry Rhubarb Compote
2 dashes Dillon’s Rhubarb Bitters
1 oz tonic
Lime
Fresh Mint sprig
Over ice combine the vodka, lime juice, grenadine, bitters, and strawberry rhubarb compote. Shake, serve in a wide tumbler glass and top with tonic. Garnish with a fresh lime wheel and mint sprig.
