Our fresh raspberries are first frozen to help concentrate the juices. Then, the company Impress of Quebec presses them into a creamy puree which is mixed with lemon juice and sugar before filtering. We decided to keep some pulp in the syrup because even our memories are flavorless and preservative-free.
A very acidic roundness of raspberry coulis which develops jammy notes. On the finish, it feels like biting into the astringency of fresh raspberries.
